Purple tailladées olives in lemon marinade

As olives ”turn” or ripen from green to black they become flesh colored for a short time. Their flavor at this stage of ripening is delicious, very lightly bitter. Salt brine curing and the addition of aged red wine vinegar, black peppercorns and bay leaves sweetens olives tournantes, ”turning” olives. These olives are finished with a dash of sunflower oil. ingredients : turning olives, water, red vinegar, sunflower oil, lemon, salt, black peppercorns, bay leaves, citric acid.
